Healthy veg kurma

Easy saravana Bhavan white kurma.........just take a cup of veggies like carrot, potato,green peas,beans, cauliflower.pressure cook these veggies with a pinch of salt and a desired amount of water for two whistles.keep aside.In a pan,add a spoon of cooking oil .heat it ,add 5to6 green chillies,10 cashews,one tablespoon of sombu and kasa kasa.saute it for five minutes,then add a cup of dessicated coconut.switch off the stove after adding coconut.mix it.let them to cool.After cooling,grind it in a mixie by adding sufficient water and make it as a paste.so pressure cooked veggies and our white paste is ready now.Heat a kadai,add a spoon of oil ...if you add coconut oil it will tastes good.Add some cinnamon,brinji leaf.when it pops up,add the cooked veggies and allow to boil for 2 to 3 minutes.then add the grinded paste.Rinse the mixie jar with a glass of water and pour in the kadai.add required amount of salt.Adjust the amount of water according to the consistency.just mix it and allow to boil for 5 minutes.drop some curry leaves and switch off the stove.our white kurma is ready to serve.Goes well with chappthi,poori,idli,dosa,idiappam.you can replace cashews with almonds.have to soak almonds for 8 hours,peel the skin and use it.
